RECIPE: Mini Cannolis

We've got a small Christmas present for our readers. Sure we have a recipe, but more important, we have some free stuff to give away. We have some certificates for the mini-desserts at Carrabba's Italian Grill. Actually, the certificate gets you a selection of three mini desserts. Here's what the card says:

To earn one of these, all you have to do is make the recipe below, post a picture of it online (or email it to us) and post your comments about the recipe. The first four people to do so by Monday morning [December 15th 2009] will each get a certificate. If we don't have four entries, we'll select the remaining winners through a means that will be kept secret until the winners are announced - but let's just say that if we don't know who you are, your chances of winning anything are greatly diminished.

I wish I had more stuff to give away, but that's all I have at the moment. I hope you enjoy the recipe.

Carrabba's Mini Cannoli Recipe

Cannoli Mix Ingredients

1 and 1/2 cupsricotta cheese
1/2 cuppowdered sugar
1/2 teaspoonvanilla
1/4 teaspooncinnamon
1/2 cupmini choc chips
1 cupMascarpone cheese

Cannoli Mix Instructions:

Mix ricotta cheese and powdered sugar in a mixer with a wire whip until smooth (5 minutes)

Stop the mixer and scrape the sides of the bowl with a spatula. Add vanilla, cinnamon, and chocolate chips. Mix on low speed until blended

Stop the mixer and add the mascarpone. Mix by hand with a wire whip until blended.

Place mix into a piping bag to serve.

To serve mini cannoli:


Pipe cannoli mix into a tall shot glass about halfway full.

Layer a tablespoon of crumbled cannoli shells.

Pipe cannoli mix to the top of the glass.

Top the mix with a teaspoon of chopped pistachios.

Yields 15-20 servings.
